LOVE this day so far. Still in PJs. Just me and my girl…we just wore our matching aprons (must blog pic soon) and made cookies and then DINNER. Yea, well, she wanted to do some cooking and I needed to have dinner DONE b4 carpool bc I have a long run tonite…and then we’re off to "packet pickup" for Braeden’s tri in the a.m. YES, he is the coolest kid EVER.
Anyway, fun times…love thinking of the memories Maya and I are making on "crazy lazy Fridays" like today. Lots of laughs…trying to soak it all in b4 shes 16 and too cool for mommy. <sigh>
So, I felt compelled to blog my dinner recipe – its become a favorite around here. Enjoy…
Italian Baked CHicken and Pastina
1 c pastini pasta (or any small pasta)
2 T olive oil
1/2 c cubed chicken breast (1" cubes) – I use a little more
1/2 c diced onion (about 1/2 a small onion)
1 clove garlic, minced
1 (14.5 oz) can diced tomatoes with juice (I use the basil/oregano one)
1 c shredded Mozzerella cheese
1/4 c choped fresh flat-leaf parsley
1/4 t kosher salt
1/4 fresh ground pepper
1/4 c bread crumbs – I use Panko
1/4 c grated Parmesan
1 T butter, plus more for buttering dish – I use "I cant believe its not butter"
Preheat 400 oven.
Bring medium pot of salted wather to boil over high heat. Add pasta and cook until just tender, stirring occasionally for about 5 mins. Drain pasta into large mixing bowl.
Meanwhile, put olive oil in med saute an over med heat. Add chicken and cook 3 minutes. Add onions and garlic, stirring and cooking until onions are soft and chix is cooked thru, about 5 mins. Put chix mixture into bowl with pasta and then add tomatoes, mozz cheese, parsley, salt, and pepper. Stir to combine. Pour mixture into 8×8 (buttered) baking dish. In small bowl, combine parm cheese and bread crumbs and sprinkle over top. Dot w/butter. Bake until top is golden brown, about 30 mins.
